Indonesian cuisine is one of the richest culinary traditions in the world and is full of intense flavors. The richness of its cuisine is a reflection of the diversity of cultures and traditions of the archipelago, which consists of about 6,000 inhabited islands, and plays an important role in Indonesian national culture in general. Almost all Indonesian dishes are rich in spices derived from spices such as candlenut, chili, temu kunci or fingerroot, galangal, ginger, kencur or kaempferia galanga, turmeric, coconut, and gula jawa or coconut/ palm sugar.

Just like what I am going to share today, it calls "Karedok". It is very similar to gado-gado, except all the vegetables are raw, while most gado-gado vegetables are boiled
Karedok is a raw vegetable salad in peanut sauce from Sundanese region, West Java, Indonesia. It is one of the Sundanese signature dishes. It traditionally includes long beans, cucumbers, bean sprouts, cabbage, Indonesian basil or lemon basil (Ind: kemangi), and small green eggplant, covered in peanut sauce dressing.

Gado gado is one of the popular Indonesian dishes. It is on the list of Indonesian national dish among with others.
It's a dish consisting of mixed pre-boiled vegetable and fried tofu (or sometimes with tempeh) and dressing with creamy umami peanut sauce then served with kerupuk (shrimp cracker or other types of cracker). Lontong or rice cake also serves as a compliment. Adding simple chili sambal is most people's choice to enjoy this delicious and healthy gado gado.

We have a dozen types of gado gado. Every region has its own version of gado gado. From East Java, Surabaya gado gado is most popular. İt is slightly different from gado gado in Jakarta / Betawi. In middle java, people also serve different kinds of gado gado. But all gado gado uses one same ingredient; Peanut sauce as dressing.

The difference between those 2 cities is the vegetables used and how to make the peanut sauce.
Surabaya gado gado uses coconut milk to make the sauce and then cook and thicken by adding a small amount of rice flour solution. 
While Jakarta/ Betawi style gado gado, peanut sauce grind with fresh garlic, chili, and palm sugar. Besides tamarind paste,
 Jeruk nipis (kaffir lime juice) is added into it so the taste is slightly sweet, umami with a sour touch of tamarind and jeruk nipis. If you don't have kaffir lime simply use lemon or lime juice instead.

The cultural diversity in Indonesia makes Indonesian cuisine has the most unique and rich in the world. 
Meals are generally simple, the plentiful use of various roots, spices, grasses, and leaves adds zest to most dishes. The common use of the chili pepper may mislead some to believe that all Indonesian dishes are spicy and hot. But actually not really true. Most of our meals have relatively mild spices and tastes. 
In addition, most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.

And today I will share one of vegetarian food that fresh yet flavorful; Plecing kangkung

Plecing kangkung is an Indonesian spicy water spinach dish from Lombok island. Plecing kangkung made from blanched kangkung leaf (water spinach) served cold with fresh plecing sambal relish made from ground red chili pepper, shallots, and bird's eye chili.

As a side dish for Lombok Ayam taliwang dish, plecing kangkung usually also served with additional vegetables such as bean sprouts, string beans, fried peanuts and urap's grated spicy coconut dressing. Outside Lombok island, plecing kangkung is also commonly served in neighboring island Bali.

And today I will share one of my fave ever, called "Karipap Pusing"

Similar to a Pasty, Karipap is another hugely popular snack in South East Asia. In Indonesia, it is called Pastel with its own twists. It is a snack of Southeast Asian origin. It is a small pie consisting of curry with chicken and potatoes in a deep-fried or baked pastry shell. The curry is quite thick to prevent it from oozing out of the snack.

Karipap Ayam is one of the most popular street snacks across South East Asia. They are truly delicious snacks. Crisp flaky pastry shells filled with a mild chicken and vegetables (potato and carrot mostly) curry.

Kalau di Jawa Timur kita sebutnya ini "jangan lodeh". Sayur lodeh ini isinya variatif sekali dan tiap daerah punya ciri masing-masing ya. Tapi intinya berisi aneka sayuran yang dimasak dengan santan. Kadang ada tambahan tahu, tempe atau udang kecil.

Saya ingat sekali waktu kecil, makan sayur ini sama kerupuk aja, sudah habisin nasi sebakul. Apalagi yang masak ibu atau simbah... waahh..jadi kangen deh 😔

Ya udah...ngobatin kangen masakan ibu, kali ini masak makanan yang mungkin hampir tiap hari ya dulu ibu atau mbsh uti bikinnya, murah, cepat dan sehat lho! 😊

Aneka sayuran yang dipotong potong sesuai selera. Disini saya biasanya pakai sayur yang ada sesuai musim saja. Misalnya sekarang ada jagung, terong, buncis, labu siam dan labu putih.

HOW TO MAKE SOME INDONESIAN PICKLES / RESEP Acar kuning dan ANEKA ACAR lainnya

Pickle in Indonesian cuisine is part of side dish that complement main dish or other meal. Different from other type of pickle which brine in vinegar or other solution and ferment for period of times, Indonesian pickle is quick to make and consume it freshly after made.

Many vegetable and fruit  we use for our fresh pickle e.g carrot, cucumber, bean sprout, cabbage, pineapple, shallot and more.
We also have cooked pickle and generally serve as side dish- we call it "acar kuning" or yellow cooked pickle.

Today's post is about my childhood meal. Me and siblings grew up with this dish. My mom or my grandmother usually cooked this for us. İt's mix vegetable (curry-look alike) cook in coconut milk. Most often tofu or tempeh also mixed in it. And if we have enough money (at that time) to buy shrimps, my mom or grandma also put some small shrimp in it.

This Called sayur lodeh ( or in Javanese language calls Jangan Lodeh). Javanese curry-like dish, content with various vegetables, like eggplant, chayote, zucchini, young green jackfruit, bamboo shoot, yardlong bean, green bean, corn and so on. Just any leftover vegetable you have in your fridge can be added. 
And for protein addition, we add some tofu, tempeh or shrimp.
İt is so simple and cheap. That the reason why this was most repeatable menu in our house during my childhood.

We eat this with plain steamed rice, adding sambal terasi is a must. Together with fried protein - like fish or chicken- as side dish, this is the most humble and so traditional of Indonesian food. And forget to mention it's vegan and healthy.

Merhaba..... Have you been to Turkey before? 
Turkey, where you can indulge your eyes with countless beautiful and historical places and scenes. And the place which satisfy your taste with dozens of shockingly delicious street foods. 

Many of my previous post of Turkish food are street food with homemade style cause İ love experiment and taste new flavor of Turkish street food then try to copy for cooking at home.
But of course İ love to learn basic and traditional Turkish food that local women serve for their family as well.
And my post today is Etsiz Çiğ Köfte, literally means meatless raw "meatball". İt's no meat version of Çiğ Köfte (read; chee kuf-te),  one of Turkey's favorite fast food/ street food. The raw meat (non fat) mixed and knead with fine grain bulgur and many kind of baharat / spices. Çiğ Köfte traditionally shaped in small long balls serve with many fresh vegetables, cucumber pickle and chili pepper pickle, with adding of sour pomegranate molasses (nar eksisi) and lemon juice. Some love to enjoy with lavash (flatbread) while other just wrap it with lettuce.

This is super easy and simple soup yet healthy and of course repeatable one.


Cauliflower potato soup

serve 5-6 portions

İngredients:
  • 350 gr cauliflower/about half head of medium one, roughly chopped
  • 200 gr potato, peeled and small diced
  •  cup red lentil
  • 1 medium yellow onion, finely chopped
  • pinch of drıed oregano (you can use fresh one)
  • 2-3 tbsp olive oil
  • 1100 ml (±200 ml) broth, depending on how thick you wanna go (chicken or beef or vegetable)
  • 1 tsp salt or to taste
 for serving:
  • olive oil or melted butter
  • oregano
  • lemon

For me rice is a staple meal. Indonesian and some neighboring countries eat rice for breakfast, lunch and dinner. For quick and easy breakfast/ brunch most of time I make fried rice with any ingredients available in my fridge. We have many kind of fried rice base on original or ingredients.

But today I will not share Indonesian fried rice but Korean fried rice with kimchi. You know I like kimchi. I made my own kimchi once or twice a year when napa cabbage in season. Usually in July~ August I can find napa cabbage in local farmer market here. A week ago I just have my kimchi fully fermented and ready to dig in, so here I am now crave some fried rice with kimchi calls Kimchi-bokkeumbap

This is my kind of comfort food. I mean with warm noodle top with teriyaki chicken and vegetables, nothing can make me feel comfier than that. Chicken or beef teriyaki is one of my favorites, I made it almost at least once a week. 

Previously I made my homemade teriyaki sauce because my fave teriyaki sauce that brought from my homeland had finished. There is some other import product sold here as well. But if you know how amazingly simple to make this teriyaki sauce, would you still purchase store-bought that cost you double?

And today I'm going to share one of my fave meal; Chicken teriyaki noodle bowl. It's not so complicated to make as you imagine. Once you ready with any ingredients, cooking process it's just take few minutes. But if you are looking for rice version, just visit my Chicken rice bowl here.

You can substitute chicken breast with beef, just make sure you slice it thinly and flatten slightly the meat with tenderizer before marinate them.

Chicken/ beef teriyaki noodle bowl recipe
Serve 4.

Ingredients I:
  • 300 gr chicken breast/ beef, thinly sliced
  • 2 tbsp homemade teriyaki sauce
  • salt and pepper
  • 1 tbsp butter/ olive oil
Ingredients II:
  • 200 gr egg noodle
  • 2 tbsp butter/ olive oil
  • 3 garlic, finely chopped
  • 1 big onion, crescent sliced
  • 1 red bell pepper, julienne cut
  • 1 green bell pepper, julienne cut
  • 4 tbsp homemade teriyaki sauce
  • 1 tbsp worcestershire/ english sauce
  • ½~1 tbsp oyster sauce
  • ½ tsp salt or to taste
  • 1 tsp fresh ground pepper and more for serving
  • sesame seed for serving
  • chopped scallion for serving

I bought some bunchs of leek from farmer market a day before, so today I make another Pırasa Böreğı or Turkish Leek Pastry börekPırasa means leek in Turkish. It's a börek filled with chopped leek. Different from my previous leek borek, I make this börek with sauce or in Turkish we call it terbiye.

This sauce makes börek soft so gives such a chewy texture on phyllo sheet, just like my husband's prefer. 
Making this börek is very easy than you think. Just prepare your yufka phyllo sheets, brush it with the sauce, sprinkle with filling, roll then slide to oven. That's it.

Serve this börek with salad and ayran drink. Mostly I serve with light soup or çorba as an entree.

If you far away from homeland..and you are in a place which has totally different culture (read; in cuisine) from yours.. believe me, your longing is worst than broken heart 😄
 hahahha.. I just exaggerate it.
But honestly I'am talking real story here. Especially anything you need to make your own homeland food isn't available locally or it's very difficult to find. I remember earlier years I'd staying here, it was around 2008 or 2009, even egg noodle was very difficult to find. I must went to big chain supermarket (where far away from my house), then sometimes I got painfully heat broken cause couldn't find it there. 

When I got lucky, my husband surprisingly brought it for me from another big supermarket near his office. To buy soy sauce, we must buy it online which sometimes also no stock.... Yes...that was my earlier year living in Turkey. Maybe local people are't familiar to Asian culinary.

That's why I start to make some homemade thing start from egg noodle, tofu, tempeh, even I sprout my own bean sprout..  So true that said: lack condition/ limitation drives you to be creative person 😄

And years gone by.. and I was so happy cause some ingredients I need to make my own style food become easier to find here.. don't know why..maybe Asian foreigners getting more settled here..😄  dunno!

If somebody ask me, which one do I prefer, Korean Drama or Korean food? spontaneously my answer would be korean food...
yeeaahh...I know...sorry for Korean drama's lover over there... And don't ask me further question: WHY?  my answer will break your heart ^,^

I like Korean food in moderate way, I like it cause some (some-not all) Korean food are acceptable by my asian tongue. Kimchi is my favorite one. I make kimchi once or twice in a year when I saw napa cabbage at local farmer market--even some friends of mine ordered Kimchi from me, they like my homemade Kimchi ^,^. Thank you girls!

And my today's post is another simple, healthy yet scrumptious side dish. You can make it maybe in 5 minutes only with all ingredients ready in your pantry ^,^
It call Oi-muchim or spicy cucumber.
