Besides bread, rice and bulgur are staples here in Turkiye. And this fluffy and fragrant turmeric rice is a fabulous way to add color and flavor to bland white rice. 

This turmeric rice reminds me of Indonesian "nasi kuning". The differences are some herbs and coconut milk that we don't use for this turmeric rice. Also, Indonesian nasi kuning uses glutinous rice mixed with long grain rice.
So this turmeric rice is simple version of that nasi kuning but still has great fluffiness and aromatic.

Maybe some of you already knew that most Asians cook rice using a rice cooker (Indonesian call it "magic jar"). Yes, since rice is a staple in Asian cuisine, we all have that rice cooker that helps us provide quick and easy fluffy rice every day.
Another way to have fluffy rice is using a steaming pot, this is a very old and traditional way, and some people still do it, especially in a very big batch.

Nasi kuning (Indonesian for: "yellow rice"), or sometimes called nasi kunyit (Indonesian for: "turmeric rice"), is an Indonesian fragrant rice dish cooked with coconut milk and turmeric hence the name nasi kuning (yellow rice).

In Indonesian culture, nasi kuning has favourable symbolic meanings. The yellow-coloured rice is perceived to look like a pile of gold,so it is often served in festive occasions; including parties, housewarmings, welcoming guests and opening ceremonies – as a symbol of good fortune, prosperity, wealth and dignity.

Nasi kuning is quite widespread and commonly found in Indonesian culture. It can be found from Java to Sumatra, Bali and Sulawesi. However, it is most strongly associated with Javanese and Minahasa traditions. In Java, nasi kuning might come in the form of a cone called a tumpeng and is usually eaten during special events. The top of the tumpeng is customarily given to the most senior person in attendance. One of the most popular nasi kuning variants comes from Manado in North Sulawesi, which employs cakalang (skipjack tuna).

The rice is cooked in coconut milk, turmeric, lemongrass, and kaffir lime leaves. The lemongrass and kaffir lime leaves give the rice a nice aroma and flavor.

In today's post, I will share with you how to make this authentic and flavorful yellow rice. Traditional turmeric rice always uses glutinous rice mixed with rice so it has a slightly sticky texture which very ideal to make "nasi tumpeng" / cone-shaped rice.
Making this aromatic turmeric rice actually very simple. All you need is a steamer basket and pot because the process to cook this is only a steaming process.

Biryani is a mixed rice dish, its origins among the Muslims of India. It can be compared to mixing a curry, later combining it with semi-cooked rice separately. 
This dish is especially popular throughout the Indian subcontinent, as well as among its diaspora. It is made with Indian spices, rice, and meat (chicken, beef, lamb, prawn, or fish), and sometimes, in addition, eggs and/or potatoes in certain regional varieties. 

The word 'biryani' is derived from a Persian word, birian, which means 'fried before cooking'. It is a popular dish that has acquired a niche for itself in South Asian cuisine. The dish has spread across a wide swath of South Asia, reaching as far west as Iraq and as far east as Indonesia.

Ingredients vary according to the region and the type of meat and vegetables used. Meat (of either chicken, goat, beef, lamb, prawn, or fish) is the prime ingredient with rice. As is common in dishes of the Indian subcontinent, vegetables are sometimes also used when preparing biryani. Corn may be used depending on the season and availability. 

The spices and condiments used in biryani may include ghee (clarified butter), nutmeg, mace, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, tomatoes, green chilies, and garlic. The premium varieties include saffron. 
In all biryanis, the main ingredient that accompanies the spices is the chicken or goat meat; special varieties might use beef or seafood instead. The dish may be served with dahi (curd) chutney or raita, korma, curry, a sour dish of aubergine, boiled egg, and salad.

Fırın Sütlaç or baked rice pudding, is one famous traditional dessert from Turkey. Served much better after keeping in the fridge to develop the texture and taste.
Some recipes can vary from one cookbook to another. Some people may add cornstarch or rice flour to their recipe. And mostly we use damla sakızı or mastic gum for this dessert. You can check my previous post for version using mastic gum here.

Another type of  Sütlaç is nonbake, but both are just great. Try it and I believe your family will like it as well.

For me rice is a staple meal. Indonesian and some neighboring countries eat rice for breakfast, lunch and dinner. For quick and easy breakfast/ brunch most of time I make fried rice with any ingredients available in my fridge. We have many kind of fried rice base on original or ingredients.

But today I will not share Indonesian fried rice but Korean fried rice with kimchi. You know I like kimchi. I made my own kimchi once or twice a year when napa cabbage in season. Usually in July~ August I can find napa cabbage in local farmer market here. A week ago I just have my kimchi fully fermented and ready to dig in, so here I am now crave some fried rice with kimchi calls Kimchi-bokkeumbap

Kıymalı means (with) meat in Turkish language. Biber means pepper and Dolması/ dolma means stuffed. So Kıymalı Biber Dolması literally means stuffed pepper with meat.


Dolma, Turkish term for stuffed vegetable dishes common in the Middle East and in Mediterranean countries including the Balkans, the Caucasus, Russia and Central Asia.

Common vegetables to stuff include tomato,pepper, onion, zucchini, eggplant, and garlic. The stuffing may or may not include meat. Meat dolmas are generally served warm, often with tahini, egg-lemon or garlic yogurt sauce; meatless ones are generally served cold.

Today I am going to share one delicious middle eastern dish calls, Chicken Mandi. It's one of popular traditional dishes from Yemen.

Mandi is now popular among other Arab countries as well. Traditionally, the meat is slow-cooked in a tandoor (underground oven) which makes the meat extremely tender and delicious and served over aromatic rice.

The spice rub used to marinate the meat (lamb or chicken) is called Hawaij– coriander seeds, cumin seeds, cardamom, cloves, cinnamon, whole black peppercorns are roasted till aromatic and made into a powder. See also how to make hawaij spices mixture in my previous post.


This is a very mild dish, not spicy at all. The rice was extremely aromatic and tasted very flavorful. Enjoy this Mandi in its authentic way! 
My husband loves it and me as Asian also enjoy it very much. And since it's not hot spice at all, my kid eat her portion happily.

Nasi Udang Sambal ala Bu Rudi / Indonesian Shrimp rice with garlic sambal

Surabaya is capital city of East Java province in Java island, also well-known as one of famous culinary destination in Indonesia. Yes, when you visit Surabaya you'll find widely various of delicious foods-traditional or even international.

And like as many other Asian cities, Surabya is also paradise of street food which mostly open almost 24 hours or start at evening. I am originally from Surabaya, so I know what kind of food you should try and where is the best around my city.

Among many famous foods, there is one which I will share today. Nasi Udang ala Bu Rudi. Nasi means rice, Udang means shrimp. Bu Rudi or madam Rudi is founder/ owner of the restaurant that serve this food.
The dish consist of white steam rice, crunchy fried shrimp, chili sambal, serundeng kelapa (spiced shredded coconut) and some fresh cucumber and Indonesian basil/ kemangi.

The typical of this famous menu is the extremely hot spice of it's chili sambal. I am talking very very seriously hot- even for some local people. You know east java food especially Surabaya's food famously spicy and hot in taste. But you can make your own sambal as your liking.

Smoked Paprika roasted chicken with pearl couscous pilaf

Have you heard pearl couscous? Have you eat it before? 
Also calls Ptitim in Hebrew, other calls Israeli couscous. In some countries calls mograbieh/ moghrabieh or giant couscous or fregola. It's small balls of toasted semolina flour. Not technically a grain, but more like pasta. 

Beside bread, couscous is a staple dish in Mediterranean area. Beside pearl couscous there is also Moroccan couscous which has smaller grain than pearl couscous. Both have high nutrition and low fat.

As an Asian this dish is part of my cuisine adventures. Mostly it took me several times to taste one food for make me like that food, but for this pearl couscous I instantly like it at 1st plate.

The unique chewy texture of this dish make me think of other yummy variation I could create from it. Last time I made couscous salad but I didn't satisfied with the taste.. So maybe I should start with simple dish first like this simple couscous pilaf.

And for make more special on our dinner table, I serve this pearl couscous pilaf with roasted smoke paprika which already became my family favorite.
These dish are perfect and fulfill all things you want to provide for your family dinner yet simple and quick to make. For complete it I made simple tomato salad and parsley. You can add some arugula and fresh mint too- I didn't have stock of it.

For making Salad dressing I simply mix some freshly lemon juice with olive oil, seasoned with salt and fresh ground black pepper. Keep in a small jar until ready to use.

And for making smoked paprika roasted chicken, you should marinate chicken and all other ingredients at least 2 hours before-- mostly I prepare a night before so I have best smoke paprika flavor seeped to my chicken perfectly in next day.

Nasi Goreng Seafood (Indonesian style fried Rice)

Rice is staple dish in Indonesia. We eat rice in breakfast, lunch and even for dinner. We make many food's variant made from rice. Not just for pilaf and rice cake (lontong or ketupat), we even process rice to become traditional snack and dessert.

And one of popular dish is Nasi Goreng or fried rice. Fried rice it self has many kind of varieties. You can check my lamb/mutton fried rice for one of variety.

And today I am gonna share my seafood fried rice. You can vary the ingredients as your liking beside shrimp and calamari as long as there is seafood in it, like fish meatball or slice of fish. And for the greens you can add some baby spinach too...



Make 4 shares

Ingredients:
• 500 gr white steamed rice (preferable left over one)
•3 medium calamari, cut into square or ring
•200 gr shrimp
•½ cup peas
• a hand full mung bean sprout
•1 spring onion, finely slice
•2 tsp oyster sauce
•2 Tbsp kecap manis/ sweet soy sauce
•1 tsp salt or to taste
•2 tsp black pepper powder
•1 tsp sesame oil
•2 + 1 Tbsp cooking oil
• 1 large egg, lightly beaten

Membuat lontong di magic jar (how to make rice cake in rice cooker)

Ingredients:
  • 2 cups rice, wash and drain
  • 8~10 cups of water (water can be reduced according to how hard rice cake you wanna go)
  • half lemon juice (optional). this helps your rice cake has a longer life time

Things you'll need
  • 1 loaf pan (10x20x7 cm)
  • plastic wrap larger than loaf pan ( I use plastic pouches and cut the sides to open wide)
  • rice cooker.
How to:
  1. Put all ingredients in your rice cooker. Push the "cooking" mode button and let it cook until the button up to "warm" mode. 
  2. Open the lid, with wooden spoon mix the rice inside rice cooker while push the soft rice between back of wooden spatula and rice cooker pan in order to make it almost like a puree. Close the lid and push button to "cooking" mode again. Let it cook until button goes up to "warm" mode.
  3. Do same method like no.2. Repeat 3 times or 4 times.
  4. Cover you loaf pan with plastic wrap, move your puree rice one wooden spoon at a time while press it hard to compress the rice cake and make it solid mass. Cover with plastic wrap and once again press it hard with something flat and let it cool at room temperature. 
  5. The rice cake will harder after keep in fridge few hours. Your rice cake is now ready to eat.

Almost halfway of this blessing Ramadhan.... Full of blessing because this summer generally Turkey area are like spring. Usually summertime temperature so high and the air is somehow dry. Even though weather forecasts predict temperature will increase slowly start next week but again... this lovely Friday Bursa is wet and fresh again... ^,^
May Allah always gives easiness for you who are doing Ramadhan fasting. And May Allah forgive our sins and accept our deeds in this holy month.

Talking about Ramadhan and fasting... I always remember the Ramadhan atmosphere in Indonesia especially in my mom's house. She always prepared Iftar table for us, full of homy meals and "takjil". "takjil" is something sweet that we eat/ drink once the adzan echoed. It's  mostly a light thing to eat/ drink-almost like dessert- before we eat the main dish... 
How I miss my hometown now.....

And here in Turkey we have a little things different than I had in my homeland but generally Ramadhan is the most joyful that we always waiting for each year.

Our today's dessert after iftar is Damla Sakızlı Fırın Sütlaç (Turkish Rice Pudding with mastic gum). The recipe I take from "Şeker bank tatlı kitab" with minor adjustment. The addition of  mastic gum in this recipe gives slightly chewy texture. But you can also try my other recipe without using mastic gum here.

Lamb/ mutton Fried Rice / Nasi goreng kambing




Nasi Goreng or fried rice is one of Indonesian national food with rice as main ingredients, stir- fried in margarine/ butter or cooking oil generally cooked with Kecap manis (Indonesian sweet soy sauce), shrimp paste, sambal (chilly), shallots, garlic, egg or other variety spices and ingredients. 
In 2011, an Internet poll conducted by CNN International and attended by 35,000 people put fried rice (nasi goreng) on the second rank in the list of '50 most delicious food in the world 'after rendang.

Fried rice spread to Southeast Asia brought by Chinese immigrants who settled there and created a local typical fried rice which is based on the difference in the spices and stir-fry way. Fried rice actually comes from several properties in the Chinese culture, which did not like the taste of cold food and also remove the leftovers a few days earlier. Hence, the cold rice and then fried to be served back.

There are different kinds of fried rice recipe but the main element is rice, cooking oil, soy sauce. In addition, many other extras that may be included, ranging from vegetables, meat, until the chili, sauces, crackers and fried eggs. Fried rice in Indonesia and in other countries can have its own variations depending on the region of origin and seasonings or ingredients used. This variation is usually influenced by the foods commonly used by local communities.

My today's post is one of fried rice' variant, it calls Nasi goreng Kambing. This fried rice is different from common fried rice since it has distinctive aroma because use many aromatic herb to get a long with lamb/ mutton meat.

Lamb/ mutton fried rice serve with shrimp cracker and pickle
Make 4 portions

Paste spices:
  • 5 cloves of garlic
  • 5 shalots
  • 2 red chilli
  • chilli padi (optinal if you like it spicy)
  • 2 pcs of cloves or pinch of powdered one

Dolmalık Bulgur (Stuffed Bell pepper with Bulgur) serve with Yogurt Salad

Dolma is stuffed vegetable dishes in the cuisines of the former Ottoman Empire and surrounding regions such as Russia, Middle East, and the Caucasus, and Central and South Asia. Perhaps the best-known is the grape-leaf dolma (yaprak sarması). Common vegetables to stuff include onion, zucchini, eggplant, tomato, and pepper. The stuffing may or may not include meat. Meat dolma is generally served warm, often with sauce; meatless ones are generally served cold and often eaten with yogurt.

Ingredients
Filling:
 8 ~ 9 medium bell pepper (any color you have)
 2 medium size onion, grated
 2 cloves garlic, finely grated
 ± 150 g minced beef
 
1 ½ cup fine bulgur
 2 tablespoons olive oil
 2 tsp cumin powder
 1 tsp pepper powder
 2 teaspoon red sweet pepper powder
 2 tsp cayenne powder
 2 tsp salt or to taste
 tomatoes for topping, slices


For the sauce:
 2 medium tomatoes, grated
 1 tbsp tomato paste or chili paste
 1 ½ cup hot water
 A little salt



method:
A) In large bowl, combine all filling ingredients (except bell pepper and tomatoes for topping). Knead until well blended. Test the taste.
B) Seeded bell pepper (as shown), sprinkle with fine salt. Then prick the bottom of those bell pepper once with a knife. Fill with stuffing mixture and cover the top with tomato slices (as shown). Arrange in pan with lid.

C) Combine all sauce ingredients and pour over the Dolma. Cook over medium heat until cooked about 20 ~ 25 minutes. Remove from pan and serve warm with yogurt salad


How to make yogurt salad:

• 1 large cucumber, finely cubed
• 1 handful fresh mint, finely chopped (or 1 tablespoon dried mint)
• 1 handful of parsley or dill, finely chopped
• 2 ~ 3 tbsp thick plain yogurt
• 1 tablespoon olive oil
• Pinch of salt
Mix all salad ingredients and mix well. Serve cold or room temperature.

Chicken Pilaf


I'm rice lover. And if you are too and looking for other idea to cook and vary our rice/ pilaf? Well, maybe this can be your choice.
Eat them with your favorite salad and sprinkle with Chilly flake or fresh green onion. 

Served: 4

Ingredients and how to cook it:
 ± 600 gr boneless chicken breast
 2 cup rice, washed and drained
 ± 125 g margarine plus 1 tablespoon, separated
 Salt and pepper to taste
 Chily flakes or sliced of fresh green onion for topping

Boil chicken until cooked, remove and strain from broth then shredded.
Heat 125 g margarine, put the rice and stir for a while. Pour with chicken broth about 2 ~ 3 cup (according to rice type you are using), season with salt according to your taste, stir well. Cover the pan and reduce heat at lowest heat. Cook until cooked (± 20 minutes). 
Turn off heat and let stand without opening the lid for about 10 minutes.

Meanwhile, heat small amount of margarine (about 1 tablespoon) in medium skillet, put shredded chicken, season with salt and pepper to taste. Mix into the cooked rice. Serve hot with a sprinkling of chilli flakes or sliced green onion and salad.

Damatesli Pilavı (Tomato rice)

I love eating pilaf. As Asian, it's main dish for me every time, everywhere. I feel  "not full" whatever I eat without eating rice. ^,^ 
In Turkey, people cook pilaf different way from I usually do(which is always steamed and plain-Cause we usually eat our meal over that steamed plain rice)
Damatesli Pilavı means Rice cooked with tomato. The final taste is "almost" like our Indonesian Fried rice... "Almost" ^,^ .....I like it though.
Here I share how to make this Damatesli Pilavı
Materials and how to make it:
 1 ½ cups long grain rice, wash and soak ± 30 minutes, drained
 2 ½ tablespoons margarine
 ½ medium size onion, finely chopped
 2 medium tomatoes, peeled and finely chopped
 2 tsp salt or to taste
 1 ½ ~ 1 ¾ cup chicken broth / beef (or hot water)

Heat margarine in medium pan, saute onion until fragrant and wilted, put in rice and stir well. Combine tomatoes and stir for few minutes. Pour in chicken broth /beef (or hot water), salt then stir well. Cover pan with lid and reduce heat (at lowest heat). Cook up to± 20 minutes until broth is absorbed in rice. Turn off heat and let stand for several minutes without opening the lid.
Serve warm with some other dish you like or just as it and salad

Chicken Cardamom with Bulgur Pilaf


Selam everybody.....Merhaba from Turkey.

Who doesn't like cardamom? If you don't like it, you better try it.
If  you are looking for dinner or lunch menu idea, I recommend this one. Quick and easy to make but the result isn't as simple as how it's prepared. I guarantee it will be repeatable menu for your family.
I made this bulgur pilaf deliberately simple so it can go with your other favorite meal.


Served 4 .

Cardamom Chicken Ingredients:
 4 pieces of chicken thighs, stab at some places with a fork
 1 medium onion, grated
 3 cloves garlic, grated
 2 tsp cardamom powder
 1 teaspoon ground cumin
 ½ tsp pepper powder
 ½ tsp powdered ginger
 ½ tsp chili powder
 4 tablespoons canola oil or other vegetable oil
 1 tablespoon molasses (can be replaced with honey)
 1 ½ tsp salt or to taste
