Besides bread (Turk; ekmek), another Turkish staple is börek. Börek can be either oven-baked, pan-fried, or slightly deep-fried. Generally, the preparation method is adapted to the shape of the pastry.
This popular meal may be prepared in a large pan and cut into portions after baking or as individual pastries. You can check my "böreklar" category to know more about this wide various Turkish pastry

And what I am going to share today is one of our family favorites and also mostly Turkish people's fave, Çiğ Börek.
Çiğ börek or just Çibörek, is a deep-fried turnover-like with ground or minced meat filling and onions. It is made with a single round piece of dough folded over the filling in a crescent shape. 
This pastry, also called Tatar pastry.

Turkish Breakfast bread with potato filling / Patates Poğaça



Pogačice (diminutive of pogača) is a type of pastry. Pogača, Poğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten in Bosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries), Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is called pogatschen in Austria. 









Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.
Mostly eaten for breakfast but also as appetizer during noon together with Turkish bulgur salad (kısır), or potato salad and hot tea.

İ love to make my apple pie in individual version so İt's easy for me to keep the rest in an airtight container.

And with mini version make me easier to put it my kid's or my hubby's lunch box.

Or just fill our picnic box for a freshly weekend picnic before the air turns completely freeze.

Just an impressive mini version! 

The crust is totally yummy! flaky and all butter type pie crust İ still couldn't move on to another recipe.

Feel free to use your own favorite pie crust, but take my word... you should try my flaky crust, it's worth to make and you gonna love it.

Börek’ is usually savory, filled with meat or cheese or even vegetables. 
But my today post is one of Turkish dessert called ‘Laz böreği’   (LAHZ’ buer-EY’-ee)
İt’s not savory borek that commonly known.

İt's a sweet dessert, made from layers of phyllo dough ( Türk; baklavalık yufka) and a filled with delish creamy vanilla custard. 
The best way to describe ‘Laz böreği’ is like baklava filled with rich vanilla custard instead of pistachio or nuts.


Laz’ is the nickname in Turkish given to people from Black sea region - where this dessert comes from


What makes this dessert really unique is its secret ingredient – black pepper! ‘Laz böreği’ made the traditional way, has generous amounts of black pepper added to the custard.
But for my version İ added small pinch of nutmeg powder also to give richness to the custard, you can skip that or try my version.

The recipe is for 30 x 40 cm baking tray, fit with baklava phyllo size. But İf you have a small family member you can half the recipe and cut phyllo in half. So you will need a 15 x 20 cm baking tray.
This dessert best consume while still fresh and crunchy so you don't want too many leftover.

Who doesn't love delish creamy and yummy little tart for after dinner dessert. This is our kind of fave dessert. My family and I love it so much. Combination of melt in mouth pie shell together with silky cream condensed milk custard as filling would indulge our appetite as dessert should be.

I was so exciting dengan tema Idfb bulan ini sebab daily I cook Turkish food! Makanan dan kebudayaan Turki sangat kental dengan pengaruh Timur Tengah, terutama di daerah South east. Karena wilayah geografi Turki yang berbatasan dengan beberapa wilayah bekas Uni Soviyet (north east), Timur tengah (south east) dan Eropah (bagian barat), menjadikan Turki sebagai negara yang unik baik dari segi kebudayaan dan cuisine nya. Banyak sekali hal yang bisa digali dan diketahui dari negara asal suami saya ini.

Awalnya saya ingin menampilkan cuisine dari negara tetangga middle east yang lain yang juga sangat mendunia kelezatannya. I like Moroccan Lamb yang dimasak dalam tagine. Atau Chicken Mandi dari negara Yaman yang sudah saya bikin sebelumnya. Atau saya ingin sertakan Palestenian Musakhan, bahkan famous Hawawshi dari Mesir...ppffff.... 
Semua masakan middle east are rich! seperti kaya-nya masakan Nusantara kita. We should digging deeper to their history... so you'll find keanekaragaman makanan mereka.

Tapi setelah memilah milih dan buka-buka file buat bikin apa, finally saya pilih ..taarrraaa.. Baklava! Why baklava?

Siapa yang nggak kenal Baklava? Kenalan dulu yuk buat yang belum pernah dengar ..... hehehe...😄  Sebab baklava ini termasuk dalam top famous dessert around the world lho. Baca link nya disini, disini dan disini juga. Jadi hampir semua orang sudah familiar, pernah mencicipi atau ingin mencicipi baklava ini. 
Oleh karena 'pesona' baklava yang sudah terkenal selevel Angelia Jolie.. (hahahaha...apa'an sih?!) maka saya pengen tampilkan baklava ini di even Idfb kali ini.

Strawberry Cobbler with Oatmeal streusel


Selam, Merhaba from Turkey everyone....




Just before strawberry out of season soon and they will be more and more expensive, yesterday I bought another kilo of fresh strawberry. Yes, I love and enjoy eating them fresh or make it for delightful dessert. 

Strawberry with crunchy flaky pie is my number one favorite. But of course together with Panna cotta would be a fancy and special dessert for your romantic dinner.

And today I made this delish strawberry cobbler. What's special about my cobbler this time is I add some yummy crumbly oatmeal streusel on top of it. So you can imagine the crunchiness topping twisted with delicious sweet slightly sour strawberry filling inside.

My family like it, especially that topping. So I am thinking to make other cobbler with other filling later. Cherries maybe?

Strawberry Galette

I like galette. No.. I love it! Especially fruity galette for dessert. The combination from flaky buttery crust and fresh fruits as topping is my number one list for my afternoon tea time. 
And also it's perfect for our after dinner dessert cause it's fresh and light. Mostly I serve it with yummy creamy kaymak (Turkish clotted cream), but sometimes with simple vanilla ice cream. Or you can serve it with whipped cream, YUM!

Beside sweet galette for dessert, we can make a savory one as well with a vary of topping, my most fave is cheese combine with any vegetables and sausage. 
But today I want to make a strawberry galette. I already made my homemade flaky pie crust a day before, so it's gonna be easy to go.

Börek (Turkish pronunciation: [bøˈɾek]; also burek and other variants) is a family of baked filled pastries made of a thin flaky dough known as phyllo (or yufka), found in the cuisines of the former Ottoman Empire. A börek may be prepared in a large pan and cut into portions after baking, or as individual pastries. The top of the börek is often sprinkled with sesame seeds.

I bought some bunchs of leek from farmer market a day before, so today I make another Pırasa Böreğı or Turkish Leek Pastry börekPırasa means leek in Turkish. It's a börek filled with chopped leek. Different from my previous leek borek, I make this börek with sauce or in Turkish we call it terbiye.

This sauce makes börek soft so gives such a chewy texture on phyllo sheet, just like my husband's prefer. 
Making this börek is very easy than you think. Just prepare your yufka phyllo sheets, brush it with the sauce, sprinkle with filling, roll then slide to oven. That's it.

Serve this börek with salad and ayran drink. Mostly I serve with light soup or çorba as an entree.

Flaky Pie Crust - basic dough

Spring is coming. And I love farmer market at spring. Berries! of course some other lovely fruits as well, but berries is most favorite for me.
And it means I'm gonna make some pies these weeks. Yup.. light, healthy and yummy dessert. 

That's why today I make some flaky pie crust in ahead. I use all butter and no shortening for my pie crust because it's very hard to find shortening in local market. If you want to mix this recipe with shortening, use 50:50 of butter and shortening.


Make sure to use good quality of butter cause it really affect the taste and the smell. I use traditional homemade butter for my recipe--just like I always did. It's very much satisfied me. I bought my butter from local farmer market in my neighborhood.

Unlike from my previous pie crust, today i make it manually, no food processor. I just want to taste the different of using processing and manual way.

Ispanaklı peynirli börek / Spinach with cheese phyllo pastry

Most of the time, the word "börek" is accompanied in Turkish by a descriptive word referring to the shape, ingredients of the pastry, for the cooking methods or for or a specific region where it is typically prepared.

In Turkey, we know many variety of börek depends it filling and how to make it. 
Su böreği  or 'water börek' is one of the most common types. Layers of dough are boiled briefly in large pans, then a mixture of feta cheese, parsley and oil is scattered between the layers. The whole thing is brushed with butter and laid in a masonry oven to cook.

Sigara böreği 'cigarette börek' or kalem böreği 'pen börek', a smaller, cylindrical variety is often filled with feta cheese, potato, parsley and sometimes with minced meat or sausage. A variety of vegetables, herbs and spices are used in böreks, such as spinach, nettle, leek, and courgette, and usually ground black pepper. The name kalem böreği was adopted in September 2011 by some Turkish pastry organizations in order to avoid alluding to smoking.

Paçanga böreği, is a traditional Sephardic Jewish specialty of Istanbul filled with pastırma or kaşar, and julienned green peppers fried in olive oil and eaten as ameze.

Saray böreği 'palace börek' is a layered börek where fresh butter is rolled between each of the dough sheets.

Talaş böreği or Nemse böreği 'sawdust' or 'Austrian' börek, is a small square börek mostly filled with lamb cubes and green peas, that has starchier yufka sheets, making it puffy and crispy.

Kol böreği 'arm börek' is prepared in long rolls, either rounded or lined, and filled with either minced meat, feta cheese, spinach or potato and baked at a low temperature.

Sarıyer böreği is a smaller and a little fattier version of the "Kol böreği", named after Sarıyer, a district of Istanbul

Gül böreği 'rose börek', also known as Yuvarlak böreği 'round or spiral börek' are rolled into small spirals and have a spicier filling than other börek.
Çiğ börek or Çibörek 'raw börek' is a half-round shaped börek, filled with raw minced meat and fried in oil on the concave side of the sac, very popular in places with a thriving Tatar community, such as Eskişehir, Polatlı and Konya.

Töbörek is another Tatar variety, similar to a çiğ börek, but baked either on the convex side of the sac, or in a masonry oven instead of being fried in oil.

Laz böreği, a specialty of the Rize region, is a sweet version, filled with muhallebi (Ottoman-style milk pudding or custard) and served sprinkled with powdered sugar. It similar with Greek Bougatsa.

Kürt Böreği is similar to Laz böreği, without the custard filling. It is also called sade (plain) börek and served with fine powdered sugar.


And my post today is one of common börek people make here, Spinach börek or Ispanaklı börek. Most of time I use cheese or peynir (turk) to mix with spinach as filling. Chicken Sausage Rolls

There is a time in a month or two I feel like don't want to do anything just lay down on my bed. When I was single a long time ago and that time came to me like a virus I usually spontaneously and unprofessionally absent from my office work... 😃

And now...when there is a time in a month or two I feel like don't want to do anything.... I can not! ^,^ With one kid asking full attention the whole day I have already "not so active" on my Facebook or tweeter anymore these past 2 years...
I just write and post in this blog with simple words and shortly as I already sleepy doing it late at night. So.. the point is I can not have lazy days anymore, not now...maybe a few years later... 😊

And for cooking also...I would find something as easiest and fast as I can... simple, quick, and maybe can be frozen to eat later again. Like this Chicken sausage roll. I made them about a dozen, eat some, and freeze the rest.
But that was my plan..couldn't resist eating this little yummy more than 3 as a snack together with hot tea in these cold days. They didn't make it into the freezer... ^,^

We love pie especially fruit pie as dessert and tea time. And this mini apple pie is the best apple pie for our tea time. Serve individually with vanilla ice cream or simple whipped cream then flush with the syrup from the filling...hmmm...just heavenly yummy.


 For pie shells
  • 125 gr cold butter, cut into small chunks
  • 180 gr all purpose flour
  • 1 tbsp sugar
  • pinch of salt
  • 1 tsp almond essence 
  • 75~85 very cold water

How I remember when I was working a few years ago..... sometimes I hate Monday. Usually I should planned and arranged something at weekend before what could made me so exciting when I start my day at Monday...for example I watched cinema after work at Monday so I booked ticket earlier on Saturday or Sunday. And We usually had 50% discount for cinema at Monday! Or I made outside lunch appointment with my friend. My Office actually provided us lunch in canteen... so eating lunch outside sometimes can refresh me and made me more energetic doing my work for the rest of that day....

Well..... that was me back then years ago. And now, with wonderful and lovely little family I have... busy at home and provide my family with good food and happiness is my biggest obsession ^,^
Every time I tried some new recipe I would ask my husband what did he think about that food.... And he always teases me with his face and expression just like masterchef jury judge the foods... (^,^)

Now let's talk about our weekend dessert.... Pumpkin! Yes... as I mentioned on an earlier post... we are still in fall and pumpkin season.... A few days ago I made my pumpkin cheesecake bars no-bake, and it was gone in a flash.
And yesterday I made this yummy pumpkin pie... My kid loves it, husband likes it and this is becoming my favorite too ^,^ Try it..maybe it'll become fave on your family too...

Selam everybody... Merhaba from Turkey....

Are you a mom who always wandering around the web or cookbooks looking for rich, quick and healthy breakfast variety everyday? 
With a growing kid around the house, no wonder if you are in situation like that. Especially my kid is "no same meal in a raw" type... You know what I mean?

Different from my husband, he likes to have egg almost everyday for is breakfast, no matter just boiled egg, omelet, with sücük (Turkish spicy sausage).... just egg enough for him.

And this tavada böreği (borek pastry cook on pan) is now become my new list for quick breakfast idea. It's easy and fast to prepare yet freshly yummy. 
As other typical turkish börek you can vary the filling with anything you like such as, potato, spinach, any kind of cheese or even minced meat.

But for easy and quick version I just use cheese and filling, optionally you can add chopped parsley as well.

Serve 4~6 portion.

Ingredients:
  • 3 phyllo sheets (for börek pastry)
  • 300 ml milk
  • 2 Tbsp yoghurt
  • 1 large egg
  • 100 ml sunflower oil
  • 100 gr butter, melted
  • salt and pepper to taste
  • Crumbled cheese, either ricotta or white cheese
  • margarine/ butter for brush the pan

Any pastries dessert is most requested in our house- beside cookies of course (^,^). Profiterol is most frequent dessert I made, yes...we are chocolate lovers! Any choux pastry with yummy cream and chocolate flush.... we never have left over.. (^,^)

And my today post again about choux pastry... I made this éclairs last weekend.. so it's a bit late post..it's okay ^,^
And since we love chocolate a lot... I made this éclairs double chocolate... chocolate pastry cream with chocolate yummy sauce. I tried many recipe for making puff pastries and all turned great for me most all time..but for this éclairs I try to use Pierre Hermé’s Eclair Recipe.. You already can imagine how this dessert would turn to be, right?

Salam..... Merhaba from Turkey everyone.....

Weekend is my favorite time..when we can spend time with family, husband and kid or with your friend. Don't you agree of that? Spending quality time with your love ones.

Welcome September.. the month where summer will end and fall will come. And as the season changes, I should prepare some change on our wardrobe---yeahhh... maybe it's too early for some of you-- but for me as a mom of growing kid, I am not sure that my kid still has some fall/winter clothes which still suit for her.

Kids growing so fast you know. We change her shoes twice. I remember bought her new shoes for summer at early summer this year... but couple weeks ago she complained that her feed was pain.. she said in her mix language "mommy, my feet sıkıstı"
sıkıstı she means like in bind or being pressed in Turkish (^,^) . So Last week we bought new shoes for her.

And of course with her clothes.... I should check and prepare all for upcoming fall/ winter-head to toe...
Anyway.... summer almost end and I'm a little regret I didn't buy much cherry this summer. I love cherry and like always do previous summer I freeze them for dessert in fall/ winter. Sometimes I made cherry jam. But as I said, I didn't buy much cherry this season....
