The word dolma is of Turkish origin from the word dolmak (to fill). The dish is found in the cuisines of the Turkic countries, the Balkans, South Caucasus, Central Asia, Middle East, and Arabia. The word varies between Turkic dialects called dolama in Turkmen and tulma in the Tatar language. The word dolma most likely comes from Ottoman palace cuisine.

Dolma is a family of stuffed dishes found in the Balkans, South Caucasus, Central Asia, and the Middle East, in which a vegetable or leaf is used as a container or wrapping for another food used as a filling. Common vegetables for stuffing are tomato, pepper, onion, zucchini, eggplant, and pointed gourd. Stuffed cabbage rolls and vine leaves are also very popular, which are sometimes also called sarma. 
Dolmas prepared with olive oil and stuffed with rice are generally served cold with a garlic yogurt sauce.

My husband is that kind of person. He loves enjoying something light and fresh after his dinner.
İ am a "snacking" person more than dessert 😊. Just like other Indonesian, İ enjoy snacks between mealtime. Enjoying my snack with tea or coffee between lunch and dinner time. So if you are a "snacking" person.. you should check my "Snack and appetizer" category to sneak my fave snack 😃

Back to my dessert topic, today İ made this delish white chocolate Panna Cotta. Yep, nothing simpler than making this İtalian dessert for the family.
Panna cotta; İtalian origin made of sweetened cream and thickened with gelatin. Some flavor adding to enrich the pudding such as coffee, chocolate or simple vanilla. İt has delectable silky smooth in texture.
İn some İtalian restaurant, it molded then serve with warm fudge sauce.

Indonesia has many....probably hundreds of variants of snacks. Start from traditional snacks e.g many kind of kueh basah (literally means wet/moist snacks), fried snacks (in Indonesian call gorengan) and other type of jajanan (snacks) mostly known as street food/ snack; for example batagor, siomay, kerak telur and more. 
Kueh basah are more often steamed than baked and usually has a sweet taste, but some are also savory. But not all of them use steamed method, named kue basah mostly because they are moist. 

Check category Indonesian Snack (jajan pasar/ kue) for more Indonesian Kueh or snack.

Just like what İ want to share today. İt's including in kue basah- calls Serabi Kinca. İt's a pancake-like, served with sweet coconut milk sauce. Traditionally the pancake is cooked on a clay concave wok and heat over a traditional clay stove with charcoal called an anglo stove.

Unfortunately, mine was broken during my flight from İndonesia to Turkey few years ago. So İ made this favorite kue basah using small teflon pan diameter ±13cm. İf you have iron cast pan it will work as well.

Merhaba..... Have you been to Turkey before? 
Turkey, where you can indulge your eyes with countless beautiful and historical places and scenes. And the place which satisfy your taste with dozens of shockingly delicious street foods. 

Many of my previous post of Turkish food are street food with homemade style cause İ love experiment and taste new flavor of Turkish street food then try to copy for cooking at home.
But of course İ love to learn basic and traditional Turkish food that local women serve for their family as well.
And my post today is Etsiz Çiğ Köfte, literally means meatless raw "meatball". İt's no meat version of Çiğ Köfte (read; chee kuf-te),  one of Turkey's favorite fast food/ street food. The raw meat (non fat) mixed and knead with fine grain bulgur and many kind of baharat / spices. Çiğ Köfte traditionally shaped in small long balls serve with many fresh vegetables, cucumber pickle and chili pepper pickle, with adding of sour pomegranate molasses (nar eksisi) and lemon juice. Some love to enjoy with lavash (flatbread) while other just wrap it with lettuce.

Summer peak here in Bursa. With dry, no wind, and high humidity, I always find something to refresh our weekend dessert. And what do you think about fresh cold and fruity dessert? 
And peach is everywhere now. I like the sweet with lightly sour of it. I can eat it just like that, with my own spicy sour palm sugar sauce, sometimes.

Pity, my husband doesn't like peach so much. He is just like my kid who eat some fruits after I cook into something that makes the fruits "disappear" or turn into something looks scrumptious for them. I'm telling you.... I am dealing with "two kids" when it comes to food.. picky..picky and picky..both my kid and hubby... sssgggh.

So I decided to make panna cotta as his favorite, and my kid would like something like pudding for her (^,^)  This dessert base on my previous strawberry cheese panna cotta I made before. I recommend you to make it as well since for me it's my best panna cotta dessert.

This rich and delicious peach cheese panna cotta become an additional new dessert menu on our table now. You just simply vary with your favorite fruits. The cream cheese makes this dessert definitely be a repeatable menu for your family.

Bubur Ketam Hitam / Indonesian Black glutinous rice porridge in coconut sauce

We are welcoming Ramadhan this early June. It is so much full of joy and blessing that we still can meet Ramadhan again this year, Alhamdulillah (^,^)

If you were living in Indonesia, you will feel how Ramadhan atmosphere affects in almost any routine activities. Usually students have shorter time at school. Some offices (not all though) also change their working hour earlier so they can finish their work earlier as well so they can have iftar with family at home.

When it comes to the fasting month of Ramadhan, most of Indonesians can get more excited, I am talking about their appetite of food. The Moms at home prepare many meals more than they usually serve daily. We try to complete our iftar table start from ta'jil*, entree until dessert and even snacks. Things that we hardly ever do daily. (^,^)

*Ta'jil (read; taqjeel) is from Arabic language means to hasten the fast break. But lately now days often defined as food for breaking the fast. In Islam it is recommended before having meal to eat snack first, preferably something sweet like dates as exemplified by the prophet Muhammad SAW



When we are talking about ta'jil, today I am going to share "bubur ketan hitam" literally mean black glutinous porridge. In Indonesia, especially in Java island it’s known as Bubur Ketan Hitam. In places with thick Malay influences (such as Sumatra and small islands around it) this is called Bubur Pulut Hitam. Meanwhile in Bali island people calls it Bubur Injin

Just like making other porridge, black glutinous rice cooked in a lot of water (some people cook in thin coconut milk) until it tender and gets porridge consistency. Adding gula jawa / coconut palm sugar as sweetened  then serve with thick light savory coconut milk.

If you see my recently posts are orange-y .... yellow or orange color..sometime mix with chocolate.... cause there is no other reason other than because I love citrus! 

And don't you think it also festive the spring, isn't it? And this blood orange is so trending in my local market. Every where I saw many booths selling this orange with cheap price..
I think it's a citrus peak.

And since I love citrus (who doesn't?) I use them in almost every meals I made....

The color of this blood orange is dark orange almost red. It's catch my attention maybe because I never find this kind of orange in my homeland... find more about blood orange here.

Dark Cocoa Panna Cotta Recipe

For our weekend dessert I made this fabulous and delicious Dark Cocoa Panna Cotta. The recipe I took from Donna Hay's recipe with minor adjustment. Well, mostly I am a person who strict to the original recipe... but I think you'll agree with me that coffee is chocolate's best friend, right?

So, for my personal adjustment I skipped the vanilla and use coffee granule instead. The final result was superb! I can taste the coffee flavor infuse to the panna cotta nicely. Not strong though but soft enough to indulge your taste...believe me, you gonna love it!

Actually it's my second time making this dark cocoa panna cotta. At 1st making I used exactly like what recipe write without any adjustment/ change at all. I used vanilla essence instead of coffee in first trial. The taste was so great, I liked it though, may family liked it as well. But the texture slightly too soft for me, so for this second trial I add gelatin powder.

Original recipe calls for 3 tsp gelatin powder, I add 1 tsp today and it turns out very nice smooth texture. Exactly like what I prefer.

You should try this dark cocoa panna cotta in your kitchen. It's simple and quick to make-except cooling time to set. Simple and fresh, like Donna Hay's style of food she created ^,^
Yet the taste isn't simple as make it. Silky soft and very chocolaty- you never imagine this made from cocoa powder instead of cooking chocolate.

Coklat, siapa yang gak suka coklat? Ya kalau kamu salah satu yang gak suka mungkin postingan saya hari ini boleh kamu lewatin ^,^

Karena hari ini saya mau bagi resep Butter cake coklat truffles. Saya sih termasuk yang moderate saja kalau makan coklat, sedang-sedang saja. Tapi suami dan anak saya... wohooohooo... they are sweet tooth banget! Ya mungkin karena suami saya orang Turki yang terbiasa dengan dessert yang manis-manis apalagi kalau creamy dan nyuklat.
Kalau anak saya sih maklum, anak kecil mana yang gak suka coklat coba? ^,^

Apa sih istemewanya butter cake truffles ini? Biasanya saya bikin pure dari cooking chocolate plus cream sebagaimana layaknya basic chocolate truffles. Tapi kali ini saya ingin buat dengan bahan dasar cake. Karena kebetulan saya punya sisa Marble butter cake yang karena saya bikinnya porsi besar (bagi keluarga saya)--kita jadi bosan makannya.

Jadi ceritanya manfaatin cake left over hasil baking 2 hari lalu. Sebenarnya cakenya sendiri masih bisa dimakan atau disimpan di freezer sampai dengan sebulan sih..tapi males ah nyimpen-nyimpen segitu lamanya. Kalau pengen lagi ntar baking lagi aja ^,^

Jadi kalau kalian punya cake sisa atau bosan dimakan gitu aja, coba deh resep ini. Untuk bahan-bahannya bisa dikonversikan sesuai banyaknya cake yang ada. Kalaupun gak punya cake sisa tapi pengen bikin, cake dasar apapun bisa kok dipakai, tetep aja konversikan bahan lainnya sesuai banyaknya cake. Paling gampang baking cake dari cake box siap pakai saja kalau ingin membuat cake truffles ini.

No Bake Pumpkin Cheesecake Bars

Previously I made pumpkin pie spice because I already have a plan to get into "pumpkin season" for my family... Yes.. fall still around and pumpkin is everywhere ^,^
And since in Turkey I can not find caned pumpkin puree so this is also my reason I made my own pumpkin puree.... You also can check my homemade pumpkin puree.

And this is my first recipe using my homemade pumpkin puree, no bake pumpkin cheesecake bars.. The combination of my "gingery" gingersnap cookie with fragrant pumpkin spice together with pumpkin and cheese cream make this dessert bars become new favorite in our house--especially my husband ^,^

I add some chocolate flavor in it so it's just even yummyly better. Put them in air tight container and keep back in freezer if you have some left over, thawed them few minute in fridge before serving. Next time I will flush with caramel sauce for different twist flavor..you can try it too for your family! (^,^)

Bal Kabağı Tatlısı (Turkish Pumpkin Dessert)

In my house, it's " flue with cough season".... so sad. Autumn always comes with those seasonal sickness. 
First person who brought it from outside was (like always) my husband. Maybe because he's the only one in our house who interact with many people outside. So he is easily infected (maybe) from somebody outside there then my kid can not far away from her father whenever he's in home... So you can guess who's gonna get next..
  

With two sick people around me I MUST stay healthy... I think every mom MUST stay fit and healthy all the time (^,^) .. if you understand what I mean.. A mom is like everything is her family. Mom is a chef, accounting, laundry and cleaning department, baby sitter... you mention it... a mom is a motor who must work 7/24 ... Imagine if that motor broken....

Tavada Böreği / Borek pastry in pan

Are you a mom who always wandering around the web or cookbooks looking for rich, quick and healthy breakfast variety everyday? 
With a growing kid around the house, no wonder if you are in situation like that. Especially my kid is "no same meal in a raw" type... You know what I mean?

Different from my husband, he likes to have egg almost everyday for is breakfast, no matter just boiled egg, omelet, with sücük (Turkish spicy sausage).... just egg enough for him.

And this tavada böreği (borek pastry cook on pan) is now become my new list for quick breakfast idea. It's easy and fast to prepare yet freshly yummy. 
As other typical turkish börek you can vary the filling with anything you like such as, potato, spinach, any kind of cheese or even minced meat.

But for easy and quick version I just use cheese and filling, optionally you can add chopped parsley as well.

Serve 4~6 portion.

Ingredients:
  • 3 phyllo sheets (for börek pastry)
  • 300 ml milk
  • 2 Tbsp yoghurt
  • 1 large egg
  • 100 ml sunflower oil
  • 100 gr butter, melted
  • salt and pepper to taste
  • Crumbled cheese, either ricotta or white cheese
  • margarine/ butter for brush the pan

Jagung Manis Keju (Cheesy Sweet Corn Cup)

This is my kid's favorite snack.. I sometimes serve this between lunch and supper time. 
I like it also. It's slightly savory, slightly sweet and make me feel really full without being guilty (^,^) ... with reduce a little butter and cheese for me, this snack absolutely healthy.

Summer time like now days, we can meet many vendors on street selling this kind of satiated snack. But here in Turkey, the taste bit different from sweet corn cup sells in Indonesia. Sweet corn cup here simply mix the corn kernels with A LITTLE part of butter, for optional topping they let us choose ketchup, acılı sos (spicy sauce), and pomegranate vinegar. No other variation like when you visit Indonesian sweet corn vendors.

In Indonesian vendors we can have some sweet corn cup variant such as: cheese, mayonnaise, bbq sauce, milky sweet, and I don't remember else (^,^)


What I made today is sweet corn cup base on my taste with cheese topping. Of course feel free to choose your own taste and topping, it's basically boiled kernel mix with butter. For further taste and variation are depends on your liking.

Strawberry Cheese Panna Cotta and Sunday's Election in Turkey

Today 7 June 2015... happy voting day for Turkiye...

Political wind warmly blows since these last few weeks before the peak of the general election day (genel seçim) 2015 last week. Everyone talked about politics and possibilities after elections later. From çay bahçesi / tea house(where Turkish people drink tea) nearly stand every inch in area where I lived, until at offices (at least at public offices that I know).

It seems everyone here is very concerned about politics and government, including my husband. He also got "political fever" like any body else.  Every evening after work, He watched all politic channel, from one channel to another .... ppffff ... I can not even watch my favorite show!

Well ... today the people of Turkish have fulfilled their rights in the election booths .... 
The result of Sunday's general election is a major blow to the biggest party now (AK Party), which has failed, for the first time since it came to power in 2002, to obtain enough votes to form a single-party government, although it is still the party that received the most votes.Well .... I only follow the news here. I'm not voter because I am not Turkish citizen ... Just wait and see where the political wind blows...But I found an interesting unique quote ...

anywaayyy....enough about what makes hot in this fresh summer in Turkey.... Let's talk about something cooler..something delightful and yummy... yes... I made Strawberry cheese panna cotta for our weekend dessert at home.
Before stawberry season ending soon... I still grab some of it from farmer market last week. Some I made this yummy Strawberry Cheese Panna Cotta, and some I will make simply strawberry hand pie later (it's a plan *_*)

Strawberry Blackberry Pie dessert and award

Nothing more I can say about this fave dessert. Combination of the crunchy pie as a base and creamy yummy cheese cream, topping with fresh fruits which covered by yummy jam... Hmmm.. who's gonna refuse this??



İngredients for 9 inch Pie Crust:
 1 ¼ cup flour
 2 tbsp caster sugar
 115 grams butter, cut into cubes and store in refrigerator until ready to use
 5 ~ 6 tablespoons ice water
 ¼ tsp fine salt
For the Filling:
 ¾ cup cream cheese
 ½ cup powdered sugar
 1/3 cup heavy cream
Topping:
 3 tablespoons strawberry/ blackberries jam
 2 tablespoons cherry liquor
 ½ tbsp gelatin, dissolved in 2 tablespoons water
 Strawberry and fresh blackberries (or fresh fruit to your taste)


Method:
>> Pie Crust:
In a food processor, put flour, salt and sugar. Gradually mix in cold butter, pulse a few times, mix in cold water and pulse to resamble (crumble). Pour into the work table, gather the dough and fist forms a ball, wrap plastic wrap and refrigerate for a few moments ± 45 minutes
Pre heat oven at 190 ⁰ C. Sprinkle your work desk with a little flour, roll dough crust wider than your pie mold. Moving into your pie mold, bake until cooked ± 25 minutes
>> Filling and topping:
Combine cream cheese, powdered sugar and heavy cream, mix until smooth and well blended, set aside in the refrigerator.
Mix the strawberry jam / blackberries with cherry liquid. Heat the gelatin by double boil until gelatin dissolves, mix in liquor mixture, stir well. Remove from heat, let it slightly cool at room temperature, mix in Fruits (strawberries and Blackberries), stir them carefully to cover them with that liquor-jam mixture
>> finishing:
Pour the cream filling over the pie crust and smooth the surface. Arrange the fresh fruit.
Store in refrigerator before serving.

Lemon Curd Mousse Cake and 1 year Blog anniversary

Yes, today is my 1st Blog anniversary. Time seemed passed so quickly, I've been writing this blog for a year now. If there is anyone (my blog reader/ follower) follow this blog from start, you'll notice the beginning of my journey writing  this blog and some changes that to be a witness of this blog transformation/ journey.


One year ago, My Blog name was NEVER ENDING LEARNING OF SIMPLY ME, as you can see picture below. I named it like that because indeed I'm still learning anything including cooking/ baking, etc.. learning process for me is never ending.. until now.

 After for a while I change my blog name few times as well as my blog page appearances. Before I finally change this blog into : "My Home diary in Turkey".. my blog name was Indonesian in Turkey. 


During one year writing this blog, some awards and appreciations came from other blogger friends and food site I've joined, all those record you can see it here
Thank you to all my readers and friends for the support for me.. Really I appreciated it. If there is one or two award passed to me but I didn't pass to other friends yet.. please be patient, I never mean to keep it for my self.. I just need more time to sit down longer in front of my computer to do so... be patient :)


Up to now, I already posted 201 posts in this blog.. hopefully there will be another more qualify and better post in future.. I just need your support friends :)


Well, and here is another post for celebrate my blog: Lemon Curd Mousse Cake.. this is my 1st attempt of mousse cake. Learning from other page and many source of making this mousse cake, here it is I share my version of lemon curd mousse cake...

Ingredients:
For the crust base:
 1 ½ cup biscuit crumb
 15 g butter, melted


Mousse Ingredients:
 1 cup lemon curd. Recipes can be found here.
 3 ½ tsp powdered gelatin
 5 tablespoons water
 2 medium size whole eggs
 
½~¾ cup granulated sugar ( I use only ½ cup)
 1 package (75 gr) powdered whipped cream and whisk with ½ cup cold milk until thick (soft peak). Store in refrigerator until ready to use.
Or you can use 1 ½ cup chilled whipped cream, beat/ whisk  until thick (soft peak) and store in refrigerator until ready to use.


Topping ingredients:
 ¾ cup lemon curd
 ½ tsp powdered gelatin
 3 tablespoons water
The process:
1) Prepare springform pan 8" size (diameter ± 20 cm). Mix  biscuit crumbs with melted butter, then press evenly on the bottom pan. Set aside in refrigerator until ready to use.


2) Make the mousse: Pour 5 tablespoons water in small sauce pan and sprinkle with gelatin powder, set aside for ±15 minutes to make gelatin soft. Place lemon curd in a medium size saucepan and warm over a very low flame (be careful not to burn it). Remove from heat.


3) Heat soften gelatin over very low heat, stir until gelatin becomes clear solution (do not boil), then immediately pour into warm lemon curd in another pan. Stir well. Set aside.


4) Simmer some water over another pot. Mix eggs and sugar in a heat-resistant bowl or stainless steel, whisk over that simmer water (double boil), beat until sugar dissolves completely (about 4~6 minutes). Remove from double boil.


5) Gradually fold that beaten egg mixture into lemon curd alternately with whipped cream, fold through until all blended and smooth. Pour into the prepared springform pan. Cover with plastic stretch and store in refrigerator.

6) Make the lemon curd topping: the process almost same as step #2 and #3 above. Soften gelatin with water in a small saucepan, let stand ± 15 minutes. Warm the lemon curd in another pan. Then heat the gelatin until clear (do not boil) and mixed with warm lemon curd and stir well. Let it chill for few minutes until hot steam gone before poured over chill mousse.


7) Finishing: Take chill mousse from fridge, pour with topping, cover again with plastic stretch and refrigerate for minimum 8 hours to overnight.
Garnish with lemon wedges or lemon candied.

Kiwi Yogurt Panna Cotta with Pom jam sauce



Creamy and delish dessert is always being the number one request from hubby. Except for his favorite tiramisu, he always craves something like this, panna cotta. 


 
Ingredients:
- 1 cup plain yogurt
- 3 tablespoons water
- 4 tsp gelatin powder
- 1 cup (200 ml) heavy cream
- 1 cup (250 ml) milk
- ½ cup sugar
- 1 tsp vanilla essence

Panna Cotta with Kiwi and Pom Jam

Until today,3rd March 2011 I still couldn't access blogspot from Turkey (read my previous post about it). Sometimes I can open/ access my dashboard page only (so I can write/ edit new post), sometimes I can not access at all. Hope Google Turkey can solve the problem with Turkish court & "Digiturk" soon regarding Digiturk's objection on Turkish league football streaming on some Blog.

Now, we'll talk about our favorite matter, Food ! d(^_^)b
I'm a little bit adventurer including in food. Feel so glad that I'm be able to taste a variety of food from various places (countries). For satisfy my Asian taste, Japanese and Thai Food is my number one choice. Turkish and Arabic coffee are my choice for beverage, but I always got one hot cup of Starbucks' latte a long with me to office when I was in Jakarta. Yes, I'm coffee lover. For dessert, creamy, light and d'lish are my fave... Frankly speaking I never made that kind of  dessert before when I was single. obvious reason was: I was living alone, so get them in ready was always easy.... @(^_^)@

And this Panna cotta is my 1st attempt. After googling and find out what Panna cotta is and how to make it... voalla... here it is.. My First Panna Cotta !

Ingredients:
- 3 tablespoons cold water
- 3 tsp gelatin powder
- 1 cup (200 ml) heavy cream
- 1 cup (250 ml) milk
- ½ cup sugar
- 2 tsp vanilla extract
- 1 cup plain yogurt
Garnish:
- Kiwi
- Pomegranate (I use pomegranate jam)
