Basically, there is no single form of "Indonesian cuisine", but rather, a variety of regional cuisines which are influenced locally by Indonesian culture as well as foreign influences. 
For example, rice that is processed into (steamed) white rice, ketupat or lontong (rice cake steamed using banana leaves or plastic) is the staple food for the majority of the Indonesian population, but for the eastern Indonesia, sago, corn, cassava, and sweet potatoes it is more commonly consumed. 
The general serving format for most Indonesian meals consists of staple foods with side dishes of meat, fish, or vegetables on the side of the plate.

Sumatran cuisine, for example, often displays Middle Eastern and Indian influences, such as the use of curry spices in meat and vegetable dishes, while Javanese cuisine develops from indigenous Indonesian cooking techniques. Cultural elements of Chinese cuisine can be distinguished in several Indonesian dishes. Dishes such as noodles, meatballs, and spring rolls have been absorbed in the art of Indonesian cooking.

Did you eat beef/ cow skin before?
Or maybe you didn't know that beef/ cow skin can be so delicious when it is cooked properly.

Some countries like in Asia or Africa are familiar with this beef skin. Just like in Indonesia, mainly on Java island.
We called this beef/ cow skin "kerecek or krecek" in Java.

Krecek or kerecek can be made of cow or beef or buffalo skin. On islands like Bali-which mostly non-Muslim, they make "kerecek" from pig skin.

This "kerecek" is commonly found in Indonesian cuisine. We can find it fresh, clean, and ready-to-cook cow/beef skin in any traditional market.
Some are dried and can be fried as "kerupuk" or crackers.

What is "Putu Bambu"?

Putu Bambu, other name is "kue putu", is a traditional Indonesian "kue" (snack). Made of rice flour filled with coconut/ palm sugar and steamed inside a small bamboo tube (pipe-like)-hence the name.

This Javanese traditional snack is a street food sold by street vendors, and also can be found in traditional markets (pasar) along with many other traditional "kue"

"Klepon" , is one kind of Indonesian traditional snack. It's a dumpling made from glutinous rice flour with palm sugar filling, wrapped in fresh shredded coconut.

The original and traditional flavor is "Pandan" just like my previous "Klepon recipe" here.

In Indonesian, snacks are called kudapan, or makanan kecil (lit. "small food"), or makanan ringan (lit. "light food"). 
They might taste savory or sweet, but snack foods are a significant aspect of Indonesian cuisine which is very diverse. 

Traditional kue or snacks — a collection of steamed or fried snacks with traditional-based ingredients, exist in many forms.

Sambal is a staple condiment in most Indonesian cuisine. Almost all Indonesian food requires sambal to be served together with it.

Sambal is an Indonesian chili sauce or pastes, typically made from a mixture of chili peppers with secondary ingredients, such as shrimp paste, garlic, shallot, sugar or palm sugar, and tomato or even peanut or other ingredients.

Besides the ordinary main course, Indonesian people also like to eat snacks (snacking).

In Java, traditional kue is categorized under jajan pasar (litteraly: "market buys" or "market munchies"). 
The colorfully decorated jajan pasar is usually given as a food gift or served to accompany tumpeng (the main dish) during traditional Javanese ceremonies.

Indonesian cuisine is one of the richest culinary traditions in the world and is full of intense flavors. The richness of its cuisine is a reflection of the diversity of cultures and traditions of the archipelago, which consists of about 6,000 inhabited islands, and plays an important role in Indonesian national culture in general. Almost all Indonesian dishes are rich in spices derived from spices such as candlenut, chili, temu kunci or fingerroot, galangal, ginger, kencur or kaempferia galanga, turmeric, coconut, and gula jawa or coconut/ palm sugar.

Just like what I am going to share today, it calls "Karedok". It is very similar to gado-gado, except all the vegetables are raw, while most gado-gado vegetables are boiled
Karedok is a raw vegetable salad in peanut sauce from Sundanese region, West Java, Indonesia. It is one of the Sundanese signature dishes. It traditionally includes long beans, cucumbers, bean sprouts, cabbage, Indonesian basil or lemon basil (Ind: kemangi), and small green eggplant, covered in peanut sauce dressing.

What is "cilok"?

Cilok (from Sundanese language), is an Indonesian ball-shaped dumpling made from aci (tapioca starch). 
It's a Sundanese snack originating from West Java, Indonesia. 
In Sundanese language, cilok is an abbreviation of aci dicolok or "poked tapioca", since the tapioca balls are poked with lidi  (skewer made from the midrib of the coconut palm frond).

Cilok balls are boiled until cooked or deep fried in ample cooking oil and might be served with peanut sauce, kecap manis (sweet soy sauce), sambal, or chili sauce.
The texture of cilok is quite chewy, its shape and texture are quite similar to Japanese dango, although almost all cilok variants are savory compared to sweet dango.

Cilok is a popular street snack, usually sold by traveling vendors using carts or bicycles frequenting residential areas, marketplace, busy street-side, or stationed in front of a school. The chewy tapioca balls with savory peanut sauce are a popular snack among Indonesian school children

Rempeyek is derived from the Javanese onomatopoeia "peyek", depicting the sound of a crisp cracker breaking.

Rempeyek is often associated with Javanese cuisine, served to accompany "pecel/ petjel" (vegetables in peanut sauce) or other meals, or as a snack. Today, it is common throughout Indonesia, and is also popular in Malaysia following the migration of Javanese immigrants in the early 19th century.

It's my favorite cracker. Made from rice flour with some spices and fried in deep oil. The frying and making methods are typical and very unique. That is, on a deep frying wok, spread out the batter dough on the edge of the wok until it produces a very thin layer of cracker, I made a simple video also to give you an illustration of how to make this unique and traditional Indonesian "rempeyek".












Topping can vary from peanuts, green beans, black eye beans, small soybean, or dried small anchovies until dried small shrimp. A little tricky and need more patience in making it.

My today's post is pretty unique and something you will love
Klopo is the Javanese term for coconut in English. In the Indonesian language, klopo means kelapa. So sate klopo or sate kelapa is a satay wrapped in shredded coconut in the process of making it. When the satay is grilled, the grated coconut gives a distinctive and unique flavor and aroma to the satay. 

Traditionally sate klopo is dished up on banana leaves and eaten with lontong (rice cake). served with sate peanut sauce and Indonesian sweet soy sauce " kecap manis", sliced shallot, chili, and of course "serundeng" or spiced shredded coconut.

"Sate klopo" or sate kelapa, a famous dish that originated from East Java especially Surabaya and Madura Island.
Geographically, Surabaya and Madura island is very near and connected by a bridge. No wonder the satay seller mostly Maduranese people and they have the best sate klopo to enjoy every morning or early lunch.

Traditionally, tongseng is considered as the merge between lamb satay and gulai spicy soup. According to Indonesian culinary experts, tongseng started to appear in Java between the 18th to 19th centuries CE. At that time, during the colonial era, there was a significant influx of Arabs and Muslim Indians who migrated into the Indonesian archipelago. The Arabs settlers introduced and promoted goat, lamb, and mutton as their preferred meat, thus several dishes influenced by Arab and Muslim Indian culinary traditions were introduced to Java. Among others are sate kambing, which was believed to be the local adaptation of Indian-Muslim kebabs, and gulai, which was a local adaptation of curry-based soup probably influenced by Indian cuisine.

During the 19th century, the southern area of Central Java was developed as a sugar plantation, thus sugar mills were built. Next to common sugar, traditional Javanese palm sugar (gula jawa) were also produced in the region. Soy sauce factory also built in the region, as the result local Javanese developed kecap manis, which is sweet soy sauce made of a mixture of soy sauce and palm sugar. This sweet soy sauce becomes the main sauce that combines the savory gulai soup with pieces of goat satay and the fresh crisp of cabbages and tomato.

Gado gado is one of the popular Indonesian dishes. It is on the list of Indonesian national dish among with others.
It's a dish consisting of mixed pre-boiled vegetable and fried tofu (or sometimes with tempeh) and dressing with creamy umami peanut sauce then served with kerupuk (shrimp cracker or other types of cracker). Lontong or rice cake also serves as a compliment. Adding simple chili sambal is most people's choice to enjoy this delicious and healthy gado gado.

We have a dozen types of gado gado. Every region has its own version of gado gado. From East Java, Surabaya gado gado is most popular. İt is slightly different from gado gado in Jakarta / Betawi. In middle java, people also serve different kinds of gado gado. But all gado gado uses one same ingredient; Peanut sauce as dressing.

The difference between those 2 cities is the vegetables used and how to make the peanut sauce.
Surabaya gado gado uses coconut milk to make the sauce and then cook and thicken by adding a small amount of rice flour solution. 
While Jakarta/ Betawi style gado gado, peanut sauce grind with fresh garlic, chili, and palm sugar. Besides tamarind paste,
 Jeruk nipis (kaffir lime juice) is added into it so the taste is slightly sweet, umami with a sour touch of tamarind and jeruk nipis. If you don't have kaffir lime simply use lemon or lime juice instead.

The combination of geographic and cultural diversity in Indonesia has resulted in one of the most unique cuisines in the world. In addition, Indonesia is rich in spices and herbs.
Foods vary from one region to another. The food from the east is really different from west Indonesia. Sumatran cuisine, for example, often features Middle Eastern and Indian influences, such as the use of curry spices in meat and vegetable dishes, while Javanese cuisine evolves from indigenous Indonesian cooking techniques.











Just like what I am going to share today. "Pecak ikan" is a dish made from fried/grilled fish (any kind of fish) then flush with "pecak" spicy dressing. The spices used for "pecak" dressing are very typical of Javanese food.
This dish easily can be found in West Java, Jakarta, and regions surrounding it like Cirebon town, Tasikmalaya, or even Tegal town.
