Soseji Ppang: Soseji (sausage) and ppang (bread). It can also be found as Pizza ppang (피자빵). It's one of the most popular street food in Korea.

The bread is soft and fluffy with slightly sweet and spicy sausage as a topping. Other popular fillings include chicken, cheese, and vegetables. Sausage ppang is often served with ketchup or chili sauce on top. It can be found at most street food stalls in Korea, and it’s a popular snack for both kids and adults.

If you love Turkish food, you may hear about simit or Turkish bagel. A big ring shape bread covered with sesame seeds is one of the famous street food in Turkey.

And today I will share another Turkish delicacy; Açma or Turkish soft bagel. Yep.... this is a soft version of a Turkish bagel. If simit has crunch skin outside while chewy inside, this soft bagel version has a cotton-soft texture.

Usually, it is also sold together with simit and other traditional or nontraditional Turkish patisserie products.













Açma is generally made without filling, but during the processed butter applied over the dough before rolling it into a ring shape. That butter gives such a delicious and distinguished taste when you tear the bagel, it'll wire-like texture.

Semprit susu / Condensed Milk Spritz Cookies (eggless)

If you are my regular reader of this blog you might notice that these couple weeks I post many cookies recipe. Yep... I made many cookies few days before Eid al Fitr as Indonesian and some other countries' tradition to celebrate Eid Mubarek.

Different from Turkish tradition that serve baklava and share a lot of candy to kids, in my homeland we welcome our guest with jars of various cookies. Check my Cookies category list to see other traditional and classic cookies I had made.

And what I am about to share today is semprit susu or milk spritz cookies made of condensed milk with cornstarch. I found the recipe from one cooking group in facebook. It become new fave and popular among Indonesian baker since it has melt in mouth texture as Indonesian prefer.

Making this cookies is super-easy. You just cream the butter with condensed milk. No electronic mixer require, if you beat the butter until pale and fluffy you might end up with flat cookie. Add in the cornstarch and just use wooden spoon or spatula to combine well. Add the essence as your prefer to give aroma to the cookies. Bake the cookies at low temperature.

My today's post is pie basic dough. I'm planning to make a pie for dessert this weekend.. I still have no idea what kind a pie I will make but surely a pie for this weekend dessert (^,^) ... long time though I didn't make any pie..

So I prepare to make this pie dough... anytime I I want to make a pie it'll just ready to go. I want flaky pie dough. And since it's very difficult to find shortening here in Turkey, so I googling recipe use whole butter, no shortening... Then I found this recipe on Smitten Kitchen...

Onde-Onde Isi Kacang hijau / Indonesian style glutinous dumpling balls




Onde Onde is one of Indonesian traditional snack or Jajan pasar (kue). Jajan Pasar (kue) is Indonesian bite-sized snack or dessert food. Kue is a fairly broad term in Indonesian to describe a wide variety of snacks; cakes, cookies, fritters, pies, scones, and patisserie. Kue are popular snacks in Indonesia, which has the largest variety of kue.

Indonesian kue are usually categorized according to its moisture. Roughly divided under two groups, kue basah (lit: "wet kue") and kue kering (lit: "dry kue"). In fact, the word kue in Indonesian language is used to refer to not only these kinds of traditional snack, but also all types of cake and some types of pastries. Most kue kering are technically pastries and many Western cakes can be considered as kue basah.


This Onde onde is one of kue basah category in Jajan pasar's variety. Make from Glutinous rice flour (black or white) covered by sesame seed with (traditionally) filled with mung bean (kacang hijau). Some  modern onde onde already modified with various filling such as chocolate, cheese, red bean, etc.


And my today's post is traditional Onde onde with mung bean filling. I used mix sesame seed for a little variation. Here I write my recipe base on "tabloid Nova" ... Have a try..and taste the real Indonesian jajan pasar in your kitchen (^,^)

Putri Mandi (mendut) #Indonesianfood / Glutinous balls with thick coconut sauce



Putri mandi is one of Indonesian traditional snack (Jajan pasar). It's glutinous rice ball fill with sweet coconut then flash with creamy coconut sauce. In (east and middle ) java island mostly people call it also "mendut"

In my homeland-Surabaya- this mendut mostly warped with banana leaf before steamed. But since I can not find banana leaf here in Turkey, so I make a little modification on cooking it.. and here it is my Putri mandi or mendut 's version don't worry, it's just as good as the original version :)

Ingredients for filling:
• 2 cups roughly grated coconut (you can use fresh or dry one)
• 1 pandan leaf (you can use vanilla if you don't purchase pandan)
• Pinch of salt
• about 200 gr* gula jawa/ palm sugar-->finely shredded (you can use dark brown sugar too)
• 1 cup water

(*)you can add more sugar if you like sweeter version
In medium pan, stir water and gula jawa/ palm sugar until all sugar dissolve. Add other ingredients and cook over medium heat until it thickened. Cool it and shape them as small as marble (slightly smaller then the skin dough you will make later)

Onde-Onde #Pandan / Indonesian glutinous dumpling Snack with pandan flavor


Onde-Onde, it's a round ball-like dumpling usually stuffed with mashed mung bean. One of Indonesian traditional snack during family tea time in the afternoon together with another traditional snack. Now days there are many other kind stuffing variety such as black bean, chocolate, cheese and other. But traditional version always come with mashed mung bean- my favorite one.
Other variation is on the skin dough like I made this time. I add Pandan flavor in it. But if you like plain one, you can check my other post here

Filling ingredients:
• ¾ cup mung beans (you can use peeled one). soak overnight
• 3 tablespoons granulated sugar
• 1 teaspoon vanilla powder
• Pinch of salt
Steam mung beans until tender. once it soft, while it's hot puree/ mash with hand blender or food processor together with sugar, vanilla and salt. Let stand to room temperature. Then shape it round of a marble. Set a side.



Ingredients for skin dough:
• 1 ½ cups glutinous flour
• 2 tbsp rice flour
• 1 tablespoon granulated sugar
• Pinch of salt
• A few drops of pandan paste
• A few drops of green food coloring (optional)
• ¾ cup water room temperature

No Knead #Bread

This is my first attempt at making no knead bread. Mostly I make ​​"soft bread" which is more popular in Indonesian taste. Total time to make this bread was approximately 18 hours, so better time to start making the dough is evening/ afternoon so you can finish whole process in morning next day.
The appearance of this bread not so successfully looking good because I didn't put it in my pyrex pan right (I was afraid my finger touch that very hot pan)... But anyhooooo..... the bread was good and we all like it :)
Yield one big loaf

Ingredients:
 3 cup all-purpose flour, plus for dusting
 
 ½ tsp instant yeast
 ½ tbsp sugar

 2 teaspoon salt
 1 ½ cup warm water
 Enough sesame, slightly grind
The process:


A) In a large bowl, mix all ingredients and stir until blended- the dough is wet and sticky one (image 1). Cover with plastic stretch and let stand a warm place for approximately 15 hours.


B) After approximately 15 hours (I did in 18 hours), the dough will seems like image No. 2, bubbles and foamy on it's surface. Sprinkle your work surface with plenty of flour, move the dough onto it, fold it several times to it self (image 3). Cover again with plastic wrap and rest for about 20 minutes.


C) Take a medium-size pan (± 18 cm), sprinkle with grind sesame seeds. Dust your hands with lots of flour, take the dough and quickly shape like a ball. Place it in pan sprinkled with sesame earlier (image 4). Cover with plastic wrap and let stand a warm place for about 2 hours before baking in oven.


D) Prepare your 8" or 9 " iron/ enamel pan/ pyrex with lid (anything heat proof). Preheat oven 30 minutes ahead. Place your iron/enamel pan /pyrex  in it. Set you oven temperature of 240 ~ 250 ⁰C (your highest temp)


E) Carefully remove the pyrex / iron / enamel pan from oven. Dust again your hands with flour before taking the dough from pan, put the dough into the pan / pyrex-be careful with the heat of the pan
Cover pan / pyrex with it lid and bake for 25 ~ 30minutes. Take pan/pyrex's lid and continue baking about 20 ~ 30 minutes more, until golden brown on surface and when you patted  sounds hollow inside.

Broken Heart Cookies (eggless)

Broken heart cookies? Well... you don't have to be broken heart first to eat this cookies. It's just cookies with Chocolate melted decoration. If you read recipe below and you can not find egg in it, don't worry... the recipe is correct and I did not use egg for this cookies. You  must try it and you bet you will like them so much with your afternoon tea or coffee.. (*_*)


Yield: about 50 cookies
Ingredients:
 1 package (250 grams) margarine, soften at room temperature
 ¾ cup powdered sugar (you can reduce up to ½ cup) 

 2 cup + 1 tablespoon flour
 2 tablespoons powdered milk
 2 tbsp rice flour
 ½ tsp fine salt
 1 tsp Vanilla powder
garnish:
 Semi-sweet cooking chocolate, melted

My Sausage Mushrooms PIZZA

Simple, quick and great meal in every time and every occasion, Pizza. Maybe the most repeatable dish on my dinner table is Pizza. Beside those facts I mentioned above, also that me and hubby like it so much. 
This another pizza version I made and different from other pizza I posted before.. try it.. maybe you'll like it as well

Ingredients: (Make about 4 round pizza ± 30 cm diameter) 
For pizza crust:
  • 3 cups all purpose flour 
  • ½ tablespoon of instant dry yeast 
  • 1 ½ tbsp sugar 
  • 1 teaspoon salt 
  • 2 cups warm milk 
  • 3 tablespoons olive oil 
Mix all crust ingredients, knead well, stretching the dough as much as possible, Until dough is firm and elastic. You May need additional flour or warm water to form soft dough. Cover with plastic wrap or kitchen towel and let it rest Until double in volume.


Ingredients for toppings:
  • ± 500 g beef sausage, cut round or cut into chunks. 
  • ± 300 g fresh button mushrooms, thinly sliced. 
  • 2 tablespoons homemade tomato paste (use 3 tablespoons if you do not use chili paste) 
  • 1 ~ 2 tbsp homemade chili paste (optional) 
  • Basil and thyme, ½ tablespoon each. 
  • 2 tablespoons olive oil 
  • 2 medium size onion, cut ring round. 
  • 3  red and green paprika medium size, cut into cubes. 
  • Salt and sugar to taste. 
  • Grated mozzarella cheese and cheddar or Edam cheese. 


Mix the tomato paste, chili paste, olive oil, sugar and salt with a little hot water, enough to form a paste and no lump. Add thyme and basil and stir well. Set aside.
Hit and flatten pizza crust dough to remove air, divided into four balls equally. Flatten with rolling pin about 1 cm a thickness and approximately 30 cm in diameter. Spread sauce mixture on pizza crust, sprinkle with sausage pieces, mushrooms, paprika, onion, mozzarella cheese and sprinkle with cheddar / Edam cheese.  Let them rest ±30 minutes. 

Preheat oven to 160 ⁰ C, cook pizza until the cheese melted and pizza crust done--I took about 20 minutes.

Enjoy while it's hot with tomato ketchup and mayonnaise.

LAHMACUN from my "guest chef" @(^_^)@

I have no guest chef except my hubby who always helps me to cook every weekend.. well ... mostly he done everything... 

I just give him instruction to do this or that @(^_^)@
And last weekend we make Lahmacun - Pizza in Turkish style. Have a try, you gonna like it too.


LAHMACUN is an item of prepared food originating in the early Turkish cuisine of the Levant, consisting of a round, thin soft piece of dough topped with spicy sauce and minced meat and straight leaved parsley , (most commonly beef and lamb). Lahmacun is often served sprinkled with lemon juice and wrapped around vegetables, including pickles, tomatoes, peppers, onions, lettuce, and parsley, cabbage salad or cilantro; atypical variants may be found as wraps for kebab meat or sauces.


Ingredients 

Dough ingredients:
 ½ tablespoons instant yeast
 ± 1 cup of warm water
 1 ½ - 2
½ cups all-purpose flour (More if you find your dough still sticky during kneading)
 1 tsp fine salt.

Panna Cotta with Kiwi and Pom Jam

Until today,3rd March 2011 I still couldn't access blogspot from Turkey (read my previous post about it). Sometimes I can open/ access my dashboard page only (so I can write/ edit new post), sometimes I can not access at all. Hope Google Turkey can solve the problem with Turkish court & "Digiturk" soon regarding Digiturk's objection on Turkish league football streaming on some Blog.

Now, we'll talk about our favorite matter, Food ! d(^_^)b
I'm a little bit adventurer including in food. Feel so glad that I'm be able to taste a variety of food from various places (countries). For satisfy my Asian taste, Japanese and Thai Food is my number one choice. Turkish and Arabic coffee are my choice for beverage, but I always got one hot cup of Starbucks' latte a long with me to office when I was in Jakarta. Yes, I'm coffee lover. For dessert, creamy, light and d'lish are my fave... Frankly speaking I never made that kind of  dessert before when I was single. obvious reason was: I was living alone, so get them in ready was always easy.... @(^_^)@

And this Panna cotta is my 1st attempt. After googling and find out what Panna cotta is and how to make it... voalla... here it is.. My First Panna Cotta !

Ingredients:
- 3 tablespoons cold water
- 3 tsp gelatin powder
- 1 cup (200 ml) heavy cream
- 1 cup (250 ml) milk
- ½ cup sugar
- 2 tsp vanilla extract

I don't Know what you call it.. I just call it PIZZA TUTUP (Closed Pizza)

Feeling Pizza crave these few days, me and hubby. But I'm boring with regular pizza that I usually serve or usually we bought. So I made this style... it is yummy good looking indeed. And we love it. The sesame seed I sprinkled on top make this pizza slightly has Turkish touch... Since this is weekend (means time to fill up our refrig stock), I just can found these ingredients. But you can vary this with chicken, tuna, turkey or beef according to your taste.

For Pizza dough
Material I:
- 1 tbsp plain flour
- 1 packet (5 g) dry instant yeast
-  ½ tbsp caster sugar
- ½  cup warm water
Mix materials I stir until well blended. Cover with plastic film or kitchen towel, let it stand about 1 hour until fluffy.

Material II:
- about 2 ½ cup flour
- ½ teaspoon salt
- ½ cup olive oil
- about ½ cup warm water
Mix the flour and salt. Add  ingredients I, knead. mix in olive oil, knead again. Add warm water gradually, knead again until soft smooth and not sticky at your hand (there may be additional flour/ water at this stage). Cover with plastic film or  towel and let stand 1 hour until the dough become double.
For filling.
- 150 gr beef sausage. cut into small cubes (1x1cm)
- 150 gr sucuk. can be replaced with beef sausage. cut into small cubes (1x1 cm)
- 2 medium green peppers. seeded and cut into small cubes.
- 2 medium red bell pepper. Seeded and cut into small cubes.

- Some Olive, cut into pieces.
- About 150 grams of fresh mushrooms. cut into cubes.
- about 200 grams of cheddar cheese. Cut into cubes or grated harshly.
- about 100 grams white cheese.
- 1 large onion. finely chopped.
- 2 cloves garlic, finely chopped / grated fine.
- 2 tbsp homemade tomato paste (I mixed with chilly paste). Dilute with a little water so as not clotted.
- Enough Thyme and basil.
- Salt and pepper to taste.
- 1 tablespoon butter for sauteing
For spread on top.
- 1 egg yolk beaten with 2 teaspoons water
- enough black and white sesame seed.

Method:
Heat the butter in a sauce pan. Saute onion and garlic until fragrant and transparent. Stir in and cook mushrooms until wilt. Stir in tomato paste solution. Season with salt and pepper. Then mix in sausage and sucuk, all parika , olives. Thyme and basil. Stir until all well blended. Cook for few minutes. Remove from heat. Set aside.
Divide the pizza dough into 2 equal part. Roll each with a rolling pin approximately 1 cm thin. Put filling mixture on it and sprinkle with cheese. Fold and close the pizza into half round shape. Brush with egg yolk and sprinkle with sesame.
Bake in preheated oven, 160 deg C for approximately 25 minutes or until pizza bread well cooked.

Enjoy while warm with tomato sauce or chilly sauce and mayonnaise.
